I would say to start with 0079, the first series. If you don't have time there's the movie versions but the og anime has more character moments. If you want more Char and also pre One Year War, watch Origin, he's practically the mc in that one.
From there, you should watch Zeta and then ZZ afterwards. He has a starring role in the first one but he's not present in the second one, so you might be disappointed. But after that there's Char's Counterattack and if you want you can dive into the side content or AUs.
There's also a lesser known SoL/isekai manga starring him called Char's Daily Life but the characterizations are more ooc. I would recommend reading the spinoff where Haman is an office lady but you would mostly enjoy it if you are already deep into the UC canon.

The dub was made in a time when animé dubs were still well done, since they were done to milk maximum moolah off of a TV audience. It really helps to 'get into it' if that makes sense, since old animé moves a lot slower than modern ones do, and the dialouge in this show is such that it really needs to be localized to travel well, if that makes sense.

Watch Thunderbolt! I'd go so far as to say that the ONA/film is better than the manga. The films are more thematically tied together by the anti-war theme, if it makes sense? It has more cute character moments, and some scenes are tweaked to make them feel more poignant. The anime more feels more yaoi potential, due to increased character focus. The vibe is 'The One to Defeat You', Fated Enemies, etc.
I watched the films because the dub is really, really good (And I'm normally a sub purist), sadly the dub is Japan-only. The films also have redone animation and epilouges-of-sorts. That said, the pacing is a bit janky, due to being an ONA at first.
The manga is more action-heavy, and it feels like the characters are less fleshed out. Although it is gorgeously drawn, if you enjoy mobile suits.
Also I share your sorrow in the lack of Thunderbolt. I'll likely end up buying them, but finding them is rare.

There's a cute scene in the manga where Garma asks Char if he was intentionally throwing a test for Garma's benefit, and Char laughing in response. This shows both of them being familiar with each other, Garma has realised by now that Char is a schemer, while Char finds Garma's perceptiveness and lack of self-esteem to be endearing. So he laughs. Notably, he doesn't seem to see Garma's perceptiveness as a threat, despite Garma basically having uncovered his modus operandi.
To cap the Charma off, here's a screencap from Super Robot Wars. Most of us know Gihren's Greed Garma, where
Char goes all pissy on Garma asking to be friends again, but the Super Robot Wars one is more interesting imo, because Quattro in Zeta is very looking back on his past with maturity and some self-awareness. And his reaction to Garma's being alive, comes across as startlingly genuine.
