In terms of actually shipping it and not just one-off weird stories Mariocest comes to mind. One of my first brocon pairs and across all their iterations there's a lot of different directions you can take them while maintaining the core personality traits. I like pining Luigi who feels guilty for loving Mario and is jealous of Peach.

It's always been a rarepair even in the Mario fandom sadly since Waluigi/Luigi used to be dominant and now Bowser/Luigi is the fandom preferred ship.

They do! Both the Mario and Luigi series and Paper Mario games have plenty of great moments. Super Paper Mario is the game that made me Mariocest shipper lol.
